Wild Alaskan Salmon

With cherries in season try this Wild Alaskan Salmon recipe
Pistachio-Crusted Wild Alaskan Salmon and Cherries
1 1/2 wild salmon fillet skin removed
1 Cup of fresh cherries
3/4 cup roasted, salted pistachios
2 T fresh mint
1/2 t salt
1/4 t pepper
2 T olive oil
1/2 cup of balsamic vinegar
1/4 cup of cherry perseveres
Remove cherry stems and pits.
Chop pistachios, place in shallow dish – Chop mint leaves
Season Salmon with salt pepper, coat both sides with pistachios. Preheat large non-stick sauté pan on medium 2-3 minutes. Place oil in pan, than add salmon, cook 1-2 minutes on each side lightly brown. Remove salmon from pan.
Reduce heat to low, combine vinegar, preserves and cherries add to pan simmer 5-6 minutes.
Return salmon to pan and cook 2-3 minutes and flakes easily.
Sprinkle with mint and serve.
