Sundried Tomato Meatballs

Add a bit of bounce to your favorite tomato sauce!

Sundried tomatoes are not just delicious…they’re high in magnesium, potassium, vitamin C, and iron – all necessary for healthy teeth and gums.  Feta adds a tasty calcium boost!

1 lb lean ground beef                               1 egg

1/4 cup crumbled feta cheese                2 garlic cloves, minced

2 tbsp sundried tomatoes, chopped     1/2 cup breadcrumbs

1 1/2 tsp dried thyme leaves                   1/4 black pepper

Combine ingredients and form into 16 one -inch meatballs.  Heat a splash of olive oil in a large saute pan.  Add meatballs and cook through. Toss with your favorite tomato sauce and enjoy over pasta or spaghetti squash.
